What I Ate Wednesday (Sept. 7)

Hello friends!  Hope you have had a lovely Wednesday!  I am writing another What I Ate Wednesday post today.  It is kind of fun documenting what I eat in a day.  Wouldn’t want to do this everyday, but once a week is good.

So last night was rough.  My day started out fine.  My morning and early afternoon went really well.  I was in a great mood.  But then I turned into a grump late afternoon.  It all started as soon as all the kids were home from school and they were irritating and snapping at one another.  And then I was trying to work on something and the computer just wasn’t agreeing with me.  I was getting frustrated.  I began to get very overwhelmed and anxious.  I am a stress eater so naturally I started craving any and all carbs.  You name it, I wanted it.  I wanted chips (even though I don’t really care for chips), cookies, Cheez-Its, popcorn.  I didn’t want the soup I had prepared for dinner.  I was so close, I mean so close to calling hubby to stop and get Chik-fil-a on his way home from work.  At that point, all I wanted was chicken tenders and waffle fries dipped in Chik-fil-a sauce and a sweet tea.  Hubby came home and luckily talked me down and we ate the soup (I still wasn’t too happy about it at the time).

This morning I woke and was so thankful that I stuck to my goal of eating healthy, even though it was really, really tough.  I am so thankful that Superman (hubby) calmed me down and helped me stay on track.  If you don’t have someone in your life that helps remind you of your health goals, I highly suggest you seek one out.  Maybe it is your spouse, significant other, best friend, neighbor, co-worker, etc.  Just try to find someone.

So now on to today’s eats:

Breakfast

My good old trusty almond butter smoothie.  Today I added in a tsp of instant decaf coffee.

Lunch

Zucchini and Shrimp.  So simple and delicious.  I cooked some shrimp in olive oil with some garlic, sea salt, and crushed red pepper.  After the shrimp was cooked I added sliced zucchini and cooked until it softened.  Two plums ended my meal quite nicely.

Snack

Cashews, walnuts, pumpkin seeds, dried cherries, and dried blueberries.

Dinner

Grilled hamburger lettuce wrap, organic tater tots, and watermelon.

Not pictured:  More watermelon after dinner because it was seriously soooo good.  One of the best watermelons we have had.  I am so going to miss watermelons once fall and winter hit.  We have been having at least one, often two watermelons each week all summer long!
